
🥕 Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1 can (400 g) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 2 cups fresh spinach or kale, chopped
- Salt and black pepper, to taste
🍲 Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic. Sauté for about 5 minutes until softened.
- Add the potatoes, diced tomatoes, vegetable broth, thyme, and basil. Stir well.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20–25 minutes, until the vegetables are tender.
- Stir in the spinach (or kale) and cook for another 3–5 minutes.
- Season with salt and black pepper to taste.
- Serve hot and enjoy your healthy homemade vegetable soup!
