Vegetable Soup (Healthy & Easy Recipe)

🥕 Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 can (400 g) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 cups fresh spinach or kale, chopped
  • Salt and black pepper, to taste

🍲 Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Sauté for about 5 minutes until softened.
  3. Add the potatoes, diced tomatoes, vegetable broth, thyme, and basil. Stir well.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 20–25 minutes, until the vegetables are tender.
  5. Stir in the spinach (or kale) and cook for another 3–5 minutes.
  6. Season with salt and black pepper to taste.
  7. Serve hot and enjoy your healthy homemade vegetable soup!
